Here's what you'll need:

- 1/2 cup red lentils, soaked for 4-6 hours (overnight is best)

- 1/4 cup rice flour (or gluten-free flour of your choice)

- 1/2 teaspoon cinnamon powder (You can leave out the cinnamon if you want to make the crepes savory to make a wrap for lunch and add any savory spice of your choice)

- A pinch of salt

- ½ cup Water (adjust this to achieve your desired thickness)

- Cooking oil for greasing the pan


For the Berry Compote:

- 1 cup mixed berries (such as strawberries, blueberries, and raspberries)

- 2 tablespoons maple syrup (or sweetener of your choice)

- 1 tablespoon lemon juice


Instructions:

1. Soak the red lentils:

- Rinse the red lentils thoroughly and place them in a bowl.

- Add enough water to cover the lentils and let them soak for 4-6 hours or overnight.

- Drain and rinse the lentils before tossing them to the blender.


2. Prepare the batter:

- In a blender, combine the soaked red lentils, gluten-free flour, cinnamon, and salt.

- Blend until you achieve a smooth batter consistency.

- If the batter is too thick, gradually add water till it reaches desired consistency.


3. Cook the crêpes:

- Heat a non-stick skillet or crepe pan over medium heat and lightly grease it with cooking oil.

- Make sure that the non-stick skillet is EXTRA HOT

- Pour a ladleful of the crepe batter onto the pan and quickly tilt the pan to spread the batter evenly.

- Cook the crepe for 2-3 minutes or until the edges start to turn golden brown.

- Flip the crepe and cook for another 1-2 minutes on the other side.

- Transfer the cooked crepe to a plate and repeat the process with the remaining batter.


4. Prepare the berry compote:

- In a saucepan, combine the mixed berries, maple syrup, and lemon juice.

- Cook over medium heat until the berries soften and release their juices, stirring occasionally.

- Remove from heat and set aside.


5. Serve and enjoy:

- Place the sweet red lentil crêpes on a plate and spoon the berry compote over them.
